One of the best ways I know of to get rid of Thanksgiving leftovers is to throw 'em all together and roll 'em up. Turkey Roll is incredibly simple. After all of the elaborate cooking we do for Thanksgiving, the week after is a time for simplicity.

Au Gratin is a rotten name for such a tasty dish. But it is what it is. The French used the term "au gratin" for culinary gems with a browned crust on top. Fresh sweet potatoes, orange juice, oats, brown sugar, butter, walnuts, and spices make this dish part of the 'upper crust' of Thanksgiving dishes, and so I changed its name a little to suit its deliciosity.

You don't need spuds to make tasty fries. Since I showed you two non-traditional ways to make burgers this week, it's only fair that I provide you with the way to make fries that measure up to these burgers.

I may not be a vegetarian, but I know a good veggie burger when I taste one, and my Southwest Black Bean Burgers are gooood!

I do not like deer meat. In fact, I don't like wild game. "Gaminess" is not a flavor that I subscribe to. But I do like my Wild Blueberry Burgers. Deer season is here in Ohio for archers, and will be soon for other hunters. So I thought, "What better time to make deer burgers?"

It was Novemberfest tonight as the Weston Sales Team made sausage! And the feature of our sausage-making event... Weißwurst. Weisswurst (ß or an "eszett" is the German letter that replaces double s) is a Bavarian favorite that I had in Munich. It is literally a white sausage. "What makes it white?" many asked. It is half veal and half pork, so the meat is white once cooked. I think it best to warn you ahead of time that it takes about 6 weeks total to make sauerkraut in a fermenting crock. 



I started by quartering my cabbage heads around the core. With a Weston Cabbage Shredder, I shredded all of my cabbage in no time. 



I have a particular set up that I like to use when shredding cabbage. Have you ever had peppermint bark? Or maybe you've had chocolate or almond bark? Well you won't have to wait until Christmas for a seasonal chocolate bark. 

It's no secret that I love the flavor of pumpkin. So I thought, why not make Pumpkin Bark? It took me a few tries to perfect the recipe, but I'm proud to share with you my Pumpkin Bark. I feel a little like Dr. Frankenstein. In the spirit of 'trick-or-treat,' today I made a Zapple Pie. Zapple Pie is both a trick and a treat. In reality it's a zucchini pie, but to your taste buds, it's a delicious apple pie.

Apples were today's focus, and so I absolutely had to use the Weston Fruit and Wine Press to make fresh apple cider. I was already excited about using this really neat tool, but since I saw it used on The Food Network's Chefs vs. City, it's become that much more cooler to use.  While I am in love with the Roma by Weston Electric Pasta Machine, I pryed my flour-covered hands off of it last night in exchange for a night in the olden days. A lot of people prefer a manual machine to an electric one. It's true, there is something strangely beautiful about using a steel bodied hand crank pasta maker.  Continuing with the theme of Pasta and Sauce for this week, I cooked up some Whole Wheat Pasta, smothered it with Pineapple Cream Pasta Sauce, and finished the evening off right with Chili Chocolate Fettucine with Raspberry Sauce.
